Champagne Chavost Blanc de Chardonnay
Description
Terroir & Vineyard: Grown on clay-limestone soils with north-facing exposure, the 5-hectare vineyard is in organic conversion. Grapes are hand-harvested at optimal ripeness to ensure exceptional quality.
Vinification: Fully fermented in thermo-regulated stainless steel vats with no added sulfites. Settling is done naturally, without enzymes, tannins, or coal, and no chaptalization is applied. Spontaneous alcoholic fermentation occurs with indigenous yeasts at 17°C, followed by natural malolactic fermentation with indigenous bacteria at 20°C. The wine is bottled unfined, without acidification or deacidification, preserving its natural purity.
Blend & Dosage: 100% Chardonnay from the first pressing (Cuvée). Brut Nature with 0 g/L added sugar at disgorgement.
Tasting Notes:
- Nose: Starts with a creamy, yeasty bouquet with hints of aubepine, evolving into a more mineral character with notes of toasted bread and yellow fruits.
- Palate: Rounded and fresh on the attack, rich and slightly chalky, with a fluid and light finish.
