Made from 50% Chardonnay and 50% Pinot Meunier, this cuvée undergoes natural fermentation with indigenous yeasts, with no added sulfites or sugar. Unfiltered and unfined, it preserves its authentic character and delicate nuances.
Terroir & Vineyard: Grown on clay-limestone soils with north-facing exposure, the 5-hectare vineyard is in organic conversion. Grapes are hand-harvested at optimal ripeness to ensure exceptional quality.
Aged for over 20 months, Eureka! offers a fresh, mineral-driven profile with subtle notes of green apple and citrus. Produced in a limited edition of only 833 bottles, it embodies craftsmanship, terroir, and a commitment to natural, minimalist winemaking.
